Title: Sweet Potato Pudding (Ko'elepalau)

Yield: 4 Servings

  About 2 pounds sweet
  Potatoes
  Water
1 And 1/2 cups coconut milk,
  Warmed

Scrub sweet potatoes clean. Take a large pot and place enough water inside that would cover the sweet potatoes. Bring to a boil over high heat. Add potatoes, cover, and turn down heat to medium. Cook about 25 minutes or until thay can be poked easily with a fork. Peel sweet potatoes while they are still warm. Mash in a bowl with potato masher. Add coconut milk. Blend well. Serve warm.
